Koleno s horčicovou omáčkou ako odmena po túre / Pork knuckle with mustard sauce as a reward after a long hike


Sonka odcestovala do Indie a my sme s Jasmi zostali doma. Od prvého dňa nám chýbala, tak som pre nás vymyslel výlet na poriadne vypotenie sa. Počasie síce nebolo v poriadku, no neváhal som a zbalil nás na túru. Nad Karpatmi sa od rána zbiehali mraky a vyzeralo to na poriadny lejak. Nič to, slamený vdovec musí aj trpieť. Veď večer sa odmením dobrým jedlom a pivom. Už dávnejšie ma zaujal jeden seriál, v ktorom sa každý chod varil iba z troch základných surovín. Aj napriek tomuto obmedzeniu dokázali kuchári pripraviť skvelé jedlá. Po túre som sa teda do toho pustil aj ja.

Sonka has gone to India and Jasmi and I stayed home alone. We missed her from the very first day and therefore I organized a little trip in order to burn some calories. Even though weather was not ideal, I did not hesitate and packed us for a hike. Clouds were gathering over Karpaty Mountains from early morning. It looked like it was going to downpour. I didn’t care about the weather that much. Grass widower has to suffer from time to time, isn’t that right? After all, I’ll reward myself with good food and pint of beer in the evening. Some time ago, I’ve seen a cooking show, where every single dish was cooked using only three main ingredients. Despite this limitation, cooks were able to prepare excellent meals. After the hike I accepted this challenge as well.

S Jasmi sme šliapali zopár hodín a naskytli sa nám krásne scenérie. Vďaka zbláznenému počasiu striedala hmla slnko, slnko dážď a zase dookola. Bolo to divadlo, ktoré stálo za tú námahu. Ak by sme ešte  natrafili na zopár dubákov, tak by to bolo dokonalé.

Jasmi and I were walking for few hours and we saw beautiful scenery. Fog was taking turns with sun and sun was alternating with rain in perfect rotation. All thanks to the crazily changing weather. It was a fascinating show worth the effort of walking. It would have been perfect if we had found few mushrooms as well.

Keď sme vyšliapali až na vrchol vápencových skál, otvorila sa nám panoráma Malých Karpát. Ak ste ešte toto pohorie nepokorili, nájdite si pár hodín cez víkend a vyšliapte na Vysokú alebo na Roštún.


As we climbed up the peaks of limestone rocks, panoramic view of Male Karpaty Mountains appeared in front of us. If you haven’t conquered this mountain range yet, I strongly advise you to climb Vysoka or Rostun peaks.


Bravčové koleno s horčicovou omáčkou / Pork knuckle with mustard sauce



Ingrediencie / Ingredients :
Bravčové koleno / Pork knickle
Zemiaky / Potatoes
Petržlenová vňať / Parsley
Olivový olej / Olive oil
Vínny ocot / Wine Vinegar
Soľ / Salt
Cukor / Sugar

Postup / Method :
Koleno uvaríme alebo upečieme do mäkka. Zemiaky ošúpeme a uvaríme v osolenej vode.
V miske si metličkou vyšľaháme horčicu, s olivovým olejom a pomaly pridáme malé množstvo octa. Dochutíme soľou, štipkou cukru a s čiernym korením. Na taniery navrstvýme koleno so zemiakmi, polejeme omáčkou a posypeme nasekanou vňaťou. Ak si koleno pripravíte vopred, tak máte skvelú večeru za 15 minút.

Slow-cook or roast the pork knuckle until it’s soft. Peel the potatoes and boil them in salted water. Stir mustard and olive oil with whisk in bowl while adding small amount of vinegar. Season the mixture with salt, pinch of sugar and black pepper. Place the pork knuckle on the plate along with potatoes. Pour the sauce on it and decorate it with parsley. If you prepare your pork knuckle in advance, you can have an awesome dinner in 15 minutes.
